ACORN SQUASH – is a winter squash with a sweet and peppery flavor. Its deep Hunter Green skin is edible, blushed with orange speckles and yellow-orange flesh that is also a bit nutty.
Store: 1 week to 6 months. Keep whole squash in a cool, dry place up to 3 months. Do not refrigerate. You can store the cut squash in the refrigerator, wrapped in plastic for up to 7 days.
Seasonings: brown sugar, butter, cinnamon, orange, parsley, rosemary, sage, thyme and maple syrup.

Great as a side dish… slice in half lengthwise, spray or drizzle olive oil, season with salt and pepper. Place cut side face down in skillet. Cook until fork tender. Cut from skin drizzle a bit more olive oil and top with pistachios or pine nuts and maybe a little shaved cheese of choice.
